what are some good and effective serves for the penhold when facing a shakehand grip opponent

Depends on:
Left or Right hand?
Style? Chop? Block? Loop? Hit?
Level?

Your level?
Your strategy?
Your hand L/R?
Your style?

Then it depends on more specifics about the other player. Are they poor at receiving short to the forehand? Are they poor at receiving long fast float into the body? etc etc.

Anyway, a few generic strategies:
If you're a righty and you're playing a lefty or vice versa, it can pay to do reverse serves into their FH.
If you see them standing close to the table send a long low fast float into them.
If you see them standing away from the table send a short low serve over.
If they keep missing flicks force them to miss some more.
If they miss off the serve loops force them to miss some more.
If you do a chop serve and they push it into the net, try and subtly change it to float or top for an easy popup. and vice versa.

A few specific penhold serves:
Wang Hao style serve. With tacky rubber it's very easy to put a ton of spin on. Usually more spin than they suspect too. Generally only chop/float with whichever side you feel like using. Great for tempting and making flickers doubt themselves.
RSM style serve. A more technically difficult serve (to do properly) but good top/chop/float deception.

But I think the question is a bit misleading: there's no 1 single serve that is effective, if you're playing with someone who is at similar TT level to you!

You can only use 1 serve(e.g. long strong backspin) to get easy points if you're playing a beginner or weaker player, who can' handle the spin. so,

VARIATION AND DECEPTION ARE THE KEYS!

(spin and placement as well...)

watch videos of pros, try to learn their serves, and then develop the one which fits your game most.
