To Jpen holders here:

I use a 7.4mm Yasaka Musashi Carbon blade but I like to know whats the difference in performance between a single-ply 10mm and 9mm Jpen blade?

BladesByCbarlie.com has been making quite a few one-ply Cypress blade, of late. If you cut two blades from the same wood and made one 9mm and the other 10mm there would be a significant difference, with the 9mm feeling flexier and slower than the 10mm. Charlie at BBC builds such blades in 0.5mm increments to customer preference.

I once played with a 10mm and it was super fast.
Then when I bought a 9mm later, I had to put a piece of long pips on the back of the blade to make the 9mm heavier and therefore faster.

I don't think all 10mm blades are necessarily faster than 9mm blades. It depends a lot on the age, hardness and density of the material used. of course if the material IS the same, the 10mm would be stiffer and faster.

For natural materials, it's hard to get exactly the same, but if they were identical and homogeneous, the increase in stiffness would be pretty dramatic. Stiffness increases with the cube of the increase in thickness, so given that a 10mm blade is 1.111 (rounded) times thicker than a 9mm blade, the increase in stiffness would be 1.111 * 1.111 * 1.111 = 1.371. Roughly 37% stiffer.
