The USATT and Australian tournaments have been streamed live and free to YouTube with far superior quality than we get with ITTF streams. Challenger Series has garbage quality also. Why is it so hard for these groups to do what the US and Australian associations can easily do?

It takes more than one HD camera to make a pro-level video. You need several, AND you need a crew of people who know what they're doing. And then you need to have someone with skills to edit the thing in the end. Which, for the most part, I do see on the ITTF web site, at least for the important games. To be honest, the current crop of videos (even the amateur stuff on YouTube) is far more watchable than stuff from the 1980s or even 90s. Even stuff that was produced for broadcast TV back then was quite poor. Cameras have gotten better and cheaper, and there are a lot more motivated people who can afford to buy them and use them. If you compare table tennis videos to live Wimbledon coverage, of course there's not much comparison. The amount of money available to spend on the problem is a couple magnitudes less.

And speaking of Wimbledon - sometimes I watch tennis on TV. I don't play the sport, but it's fairly easy to understand, and whatever they do, the drama is gripping. The Tennis style of scoring, with the 15-30-40 mini-games, with service breaks and all, gives it the drama. What would it take to do the same in table tennis? I think it would take the adoption of tennis-type scoring to do it. 21 point games are too long. 11 point games are too long. You'd have to have 5 point games, in sets of four or five games, best of 3 sets for the match. Deuce scoring within the 5 point games, perhaps tiebreakers to decide the sets. At least it'd be an interesting experiment, and it wouldn't take much to try - just run one tournament with these rules and see what happens.
