The very BEST is the whole pigs cooked in a brick oven by my wife's brother in China! :up: :party:

I think it has to do with the wood used in the brick oven. They cook them once a year for "Sweeping of the Graves Day". We all walk to the graves in the mountains and the cooked pig is taken there. Incense is burned and lots of prayers. Then huge fireworks. Then a huge dinner with the pig, geese and 10 different kinds of seafood! :up:

Here is a whole pig China Roaster. They use charcoal. After roasting, they crisp the skin, mix with the meat and the broth collected during the cooking process.

I watched the video and there is one big difference from an brick oven. In the oven the smoke from the wood and charcoal flavors the meat. Similar to smoked salmon vs baked salmon. :)
