I have noticed that I play best when using rackets (like cheap premade rackets with thin sponge) that give a lot of feedback, where I can really feel the ball off the blade. Is this a lack of experience or personal playing characteristic? It's a little concerning since the norm seems to be for thick sponge with higher level players. I assume in the long run, harder rubbers would also give better feedback (presumably to detriment in some areas)?

When I first used thicker sponge ie 2.2mm it felt like I had no feel and couldn't really tell when the ball hit the bat. Like doing some things with a glove on (can't think what), you just don't get the same feel.

You'll get used to it and will need thicker some to become a decent player. At first maybe use something a bit thinner like 1.8mm. Choice of blade could be important. I noticed last night that the Appelgren Allplay has some vibration which you might like but it's also a softer wood which you might not be used to as if say the premade bats are made of harder wood. You could always take the rubber off a premade like yours and glue new rubbers. It can be hard work though getting off the permanent glue.

The other thing is your style of play. If you play mainly defensive (pushing/chopping), there can be significant advantages in having a thin sponge as it gives you a lot of feel and control. However if you want to attack with spin (ie loop), you'll find the thin sponge will bottom out very easily, so it's really only effective for flat smashes. This means you can only really attack high balls with consistancy, as you need spin to attack low balls.

My current hard to take choice,

1.5 mm Geospin Tacky for both wing chopping, impossible to loop style, or
2.15 mm Hurricane 3 for forehand chop (difficult!!!) and loop and no backhand inverted chop style.

Which should I take? :D

If it's a choice between those two, I'd pick the Hurricane 3, because I think think you can certainly adapt to chop with this, and attack will be much more effective and higher percentage compared to the Geospin.

I'd go with haggisv on this one: I haven't had too many problems chopping with H3. That being said, I do twiddle and chop on the anti/pips a bit too. You should be fine with it; I'm sure you're a much better player than me, BeGo!
