Guys,
a lot of videos on Youtube, but being a noob - I'm a little worried that I will pick a wrong one to follow.

Any "proven" videos you could recommend / share links to?

Hmmmmm.

I wouldn't really worry about which one is right or wrong, everyone has their own method.

I think there are really only 2 rules set in granite I would advise.

- peel the edge of the rubber up from the side of the blade with your fingertips and go across the grain.

- - let the glue dry clear. do not wet glue.

Some other tips...
Use the included sponge. A new one. Don't use one caked in dried glue
1 layer of glue on the blade and 1 on the sponge is sufficient.
A box cutter/stanley knife gives a far neater cut than scissors. Make sure you have a clean blade. Don't press too hard. Do multiple cuts to each depth.
Use a rolling pin. Or bottle of wine. Don't press too hard and stretch the rubber.

Buy some cheap rubber (e.g. Reactor Corbor) on AliExpress and some cheap blades (Sanwei M8) and practise!!
