Firstly, I play a modern defensive style where I mostly use my LP BH to set up a winning forehand, and I will occasionally hit with LP if there is an easy ball. Mostly I use blocks and chops away from the table, and I prefer sponged LP, so what would you recommend?
(also black if that matters)

I typically block, chop block and attack with my ox pips close to the table, with the occasional chop if I'm forced back or playing doubles. I have been using Spinlord Dornenglanz 2 for the past year and really like it.

Another option I can recommend to you would be Giant Dragon Talon. I used Tibhar Grass D Tec S for a while, but ultimately switched because I wanted a little more control.

This is a tough one cause blocking pips, hitting pips, and chopping LPs are usually made to fit one of those profiles.
This is all my own opinions I've tried most (none of the chopping pips) but I am guessing many will probably agree with me.
best blocking pips...
-Tibhar D.Tecs
-spinlord Dornenglanz
-Giant Dragon Talon (also hits good)
-Dr. Neubauer Viper (actually can play all around style if needed)
- Sauer & Troger Hellfire - can be used in an all around fashion fairly easily.

The first two are ridiculously dangerous, but incredibly hard to learn to play. Talon is easiest pure blocking pip and hits great. The last two are fantastic, and can be used in an all around fashion also.

Best chopping are probably
-tsp p1r
-butterfly feint long (one of them not sure which). I don't do pure chopping...... yet.

Best Hitting pips
-Sauer & Troger Schmerz (though does some good chopping)
-729 755 (which it looks you are familiar with)

Best all around that you may want to try.

- Giant dragon Crop Circles. its good for hitting, chopping and blocking, in a very balanced way. jack of all trades master of none sort of way.

-Spinlord Agenda - Doesn't hit super great, but had tons of control, chops nicely and side swipes backspin like no ones business.

- Dawei 388D1

I haven't played much with sponge so all of these are OX answers.
Except Crop Circles comes with a dampening sponge and that is odd... was the first LP i tried.
Didn't like sponge after that, though I'm probably going to change as I am chopping more and more in my game.
