If I had to hazard a guess, it comes from it's resemblance to the paddles people used to use to spank their children. And they probably chose it because it didn't resemble anything close to a baseball bat, which is the only thing that comes to an American's mind when one uses the word "bat"....aside from the animal.

We should be lucky then we did not end up with a 'spatula', 'shovel', or may be a 'fan'. In Russian it is pretty much a 'racquet', I believe, same word used for big tennis, TT, squash, and badminton.
