If you look at the video posted by OP (where Stefan is wearing a black and red shirt) he hold the ball at the tip of his fingers. But I looked at last set of 4 videos posted by Def-Attack in which he seemed to have fixed this issue but still he seems to be cupping the ball and ball is almost invisible.

Rule says the ball should rest on the open flat palm and not on fingers. I have seen lots of players at lower levels violate this rule.

I think he does toss the ball 16 cm (6 inches) . Most players don't realize 6 inches in not too much. It is only the height of the net.

And yes some umpires may call his tossing the ball backwards but lots of players including pros toss more than 10 degrees of vertical & this is not usually called.
