In general, with the brushing motion and hand speed between a fast racket and a slow racket...
For example, does the slow racket of DefenseX produce more backspin than a faster racket like viscaria?

I would suggest that the spin is about the same.
The big difference is the spin to speed ratio. When you play with a slower blade it's easier to play slower shots with lots of spin. With faster blade you will probably play the shots with same amount of spin but faster. It seems like on slower blade you have more spin because it's more technically demanding to return a slow spinny ball than a faster spinny ball, but in reality the spin may be the same. It's just that the opponent may have some problems because the ball doesn't have enough forward momentum to help him ignore the spin and return your ball.
I think this works both for backspin and for topspin.
